Paleo Strawberry Rhubarb Muffins

So last night, I had a small vision of something I wanted to try, but wasn’t quite sure how I was going to get there. I wanted Strawberry Rhubarb Muffins… Paleo Versionized. Today, it came to life. So here’s the low down.

Cut up 1 lb of strawberries
Dice 2 stalks of rhubarb
Place in a pot, with 2 Tbs honey and heat on med-low for approx 20. Rhubarb should be tender. Place in the fridge and let it cool.

Muffins:

Preheat oven to 350

1 1/2 cups almond meal
1 tsp baking soda
1 tsp baing powder
Mix the above ingredients in a bowl

3 eggs
1 Tbp Honey
3/4 cup of strawberry rhubarb mixture
1 tsp vanilla
2 Tbs almond or cashew butter
Mix above ingredients together very well, then mix in the dry ingredients

You should have about 1/2 of the strawberry rhubarb mixture left. Using a muffin tin lined with paper liners or well greased muffin cups, scoop mixture into muffin cups. Bake for 20 min, then remove from the oven and using a teaspoon, put one scoop of strawberry rhubarb mixture into the middle of the muffin. You will need to use the spoon to place a small tear in the top of the muffin to let the mixture sink in a bit. Place back in the over and bake for another 5 min.
